Sourdough Discard Pancakes
Sourdough Discard Pancakes bring traditional pancakes to a new level. The added sourdough brings a greater depth of flavor to your pancakes. They are nice and fluffy too!

Pancakes Just for Breakfast?
Well, of course not! Having breakfast for dinner is one of the easiest, fun, and out of the ordinary things to surprise your kids with. Isn’t that one of the fun things about being a parent… putting a smile on your children’s faces. I mean if you really want to make them happy, though, tell them we are having ice cream for dinner! (This may or may not have happened once… or was it twice…)
Can you make Sourdough Discard Pancake batter the night before?
Yes, you can make sourdough discard pancake batter the night before. Just mix all the ingredients except the baking powder and baking soda – the leavening agents. Store the batter in the refrigerator overnight and add the baking powder and baking soda into the batter the following morning. Storing the batter overnight in the fridge or allowing it sit at room temperature does have benefits. This will allow the batter to ferment and break down the gluten in the flour and make it easier to digest.

How to get fluffy pancakes
The secret to getting fluffy pancakes is to not over mix and to let the batter rest for about 15 minutes before cooking. So, just stir the ingredients just until combined. The batter should be lumpy. And let the batter sit while you are preparing your griddle or skillet.
What temperature should you cook pancakes
Sourdough pancakes should be cooked on medium heat or around 300 degrees on an electric skillet. First prepare you pan with butter or oil and heat the pan before putting the pancake batter in.
Ingredients you will need:
- 2 cups Flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 Tablespoons sugar
- 1 3/4 cups milk
- 1 cup sourdough discard
- 1 egg
- 3 Tablespoons butter
- Toppings of choice
Tools you will need:
- Mixing bowl
- Whisk
- Griddle or frying pan
- Spatula
Making Sourdough Discard Pancakes
- Combine flour, sugar, salt, baking powder, and baking soda in a mixing bowl.
- Add the milk, sourdough discard, egg, and melted butter to the dry ingredients. Stir until just combined. Batter should be lumpy.
- Prepare griddle or skillet with oil or butter. Or set griddle to about 300 degrees or medium heat.
- Pour batter in hot pan or griddle. Add any topping at this point. When the pancakes start to form bubbles on the top, flip.
- Cook for an additional 1-2 minute or until desired crispness.
- Serve with maple syrup or butter or berries and whipped cream!

Get Creative!
There are also endless toppings for pancakes. Sprinkle blueberries, chocolate chips, bacon, even hotdogs! Two members of my family even like Hot dogs and chocolate chips in the same pancake! Weird, huh?

Hi I’m going to make these and curious what state the discard needs to be in. Does it need to be recently fed and activated?
No, the sourdough doesn’t need to be recently feed. I just use non-active sourdough discard for this recipe. Hope you like them!
