Quick and Easy Recipe

This is a very simple recipe. It’s one of those meals you can throw together quickly and it even makes broccoli not taste as bad according to some of my children. Creamy chicken casseroles are comfort food to me. That can easily be a one dish meal or you can had a starch.

Ingredients you will need for:

  • Chicken breast or rotisserie chicken
  • Broccoli
  • Mozzarella Cheese
  • Alfredo sauce (jar or make your own)
  • Salt and pepper
  • Garlic powder

How to make Chicken Broccoli Alfredo Casserole:

Preheat oven to 350 degrees.

Steam broccoli to desired tenderness.

While the broccoli is cooking, cut up the chicken.

Then pour the alfredo sauce into a small sauce pan and heat on low/medium heat. Once it starts to steam add ¾ cup of mozzarella cheese to the sauce. Stir until the cheese is melted.

To assemble the Chicken Broccoli Alfredo Casserole, pour about ¾ cup of alfredo sauce in a 9×13 pan. Add half the broccoli on top of that and then add half the chicken on top of the broccoli. Pour another ¾ cup of alfredo sauce over the broccoli and chicken. Then top with ¾ cup of shredded mozzarella. Spread the rest of the broccoli on top of the cheese and then add the chicken. Pour the rest of the alfredo sauce on top and add another ¾ cup of mozzarella cheese. Sprinkle a little salt, pepper, and garlic powder to taste on top. Bake for 20 minute or until cheese is melted and casserole is heated through. Super easy! Super quick! Add some pasta or just some bread or biscuits and you have a nice quick meal when you need one.

Is Jar Alfredo Sauce or Alfredo from Scratch
Better?

Well, of course from scratch is better. It always is! But every now and then you need the easier option and it’s ok. Give yourself grace! I’ve given myself grace a few times and I got distracted with other tasks and let my jar of sauce burn on the stove top. So in those times it bit me in the bud, but I knew I really could have just made it from scratch to begin with. But if you have the time and energy, make your own alfredo sauce. Being able to make something from scratch is fun and rewarding.

How to Make Alfredo Sauce from
Scratch?

  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cups heavy cream
  • 2 cloves garlic, minced
  • ¼ teaspoon white pepper
  • ½ cup freshly grated Parmesan cheese
  • ¾ cup shredded mozzarella cheese
    • Heat butter and olive oil in a saucepan over medium-low heat until butter is melted. Mix in cream, garlic, and white pepper and bring to a simmer, stirring often, 3 to 5 minutes.
    • Stir in Parmesan cheese and simmer, stirring frequently, until sauce has thickened and is smooth, 8 to 10 minutes. Add mozzarella cheese once sauce has thickened and stir until smooth.

  • 2 lbs Cooked Chicken breast or Rotisserie chicken
  • 2 lbs Broccoli fresh or frozen
  • 1 Alfredo sauce jar or make your own
  • 2 1/4 cups Mozzarella Cheese shredded
  • Salt, Pepper, and Garlic Powder to taste

Instructions

  • Preheat oven to 350 degrees.
  • Steam broccoli to desired tenderness.

  • Then pour the alfredo sauce into a small sauce pan and heat on low/medium heat.

  • To assemble the casserole, pour about ¾ cup of alfredo sauce in the bottom of a 9×13 pan.
  • Add half the broccoli on top of that and half the prepared chicken on top of the broccoli.
  • Pour another ¾ cup of alfredo sauce over the broccoli and chicken.
  • Then top with ¾ cup of shredded mozzarella.
  • Spread the rest of the broccoli and the chicken on top of the cheese.
  • Pour the rest of the alfredo sauce on top and add another ¾ cup of mozzarella cheese. Sprinkle a little salt and garlic powder on top.
  • Bake for 20 minute or until cheese is melted and casserole is heated through. Super easy! Super quick! Add some pasta or just some bread or biscuits and you have a nice quick meal when you need one.
