Delicious Sausage Spinach and Cheese Quiche Recipe

Quiche is one of the most versatile dishes. It works great for any meal and any occasion. Great for baby showers, mother’s day, weekend brunch, or just add to your weekly/monthly menu rotation! They come in regular pie dish size and mini bite sizes. This Delicious Sausage Spinach and Cheese Quiche recipe is our family’s favorite and will hopefully be yours soon, as well!

What Kind of Pie Crust Works for This Delicious Quiche Recipe?

My favorite is my Easy Homemade Sourdough discard pie crust recipe. It’s the perfect buttery pie crust! A traditional pie crust works is great too. It’s just a personal preference. I like a flaky pie crust for a quiche crust! 

Can I Make This Delicious Sausage Spinach and Cheese Quiche Recipe Low Carb?

This sausage spinach quiche recipe works great for a crustless quiche. I actually make it quite often without a crust. Just place sausage spinach mixture in a pie plate and pour egg mixture on top. Also you can use heavy whipping cream instead of milk (less carbs.) If a cup of heavy cream sounds like too much to you, you can use half a cup of heavy cream and half a cup of water. Works perfectly! It’s a great way to make this kind of recipe low carb!

How to Store Leftover Quiche

If you have any of this delicious dish leftover, store it in a air tight container in the place quiche in refrigerator. It is best to eat within 3-4 days. 

Tools you will need:

  • large skillet
  • Pie plate
  • pie weights – for blind baking crust (My favorite – Made in USA.)

Ingredients you’ll need

To get started making this recipe, you’ll first want to gather all your ingredients first.

Here is what you’ll need:

1 lb

Pork sausage

1/2 cup

chopped onion

2 teaspoons

diced garlic

1 bag, 6oz

Fresh baby spinach

1 cup, 6 oz

Feta cheese

1 cup

Shredded cheddar cheese, divided

1 teaspoon

Oregano

1/2 teaspoon

basil

salt and pepper to taste

Reserve 1/2 cup of shredded cheddar cheese to sprinkle on top of quiche while it’s cooking.

How to Par-Bake or Blind Bake Pie Crust

Par-Baking or Blind Baking is when you cook the crust ahead of putting the filling in. Blind baking allows your crust to get a head start on cooking. It ensures your crust will not be mushy, but will be fully cooked when your quiche is done cooking.  

Chill the formed pie crust, that you have put in a pie dish, in the freezer for at least 30 minutes. This will help the dough have a chance to set, when it is placed in the oven, before the butter begins to melt. 

Preheat the oven to 375 while your crust is in the freezer.  

After your pie crust has chilled, place parchment paper onto the bottom crust and fill it with pie weights and bake in preheated oven for 15 minutes. Pie weights help to give the pie crusts structure so it doesn’t sink when baking. 

Then removed the pie weights and parchment paper and poke the bottom crust with a fork to prevent bubbling. 

Return the pie crust to the oven to cook for an addition 7-8 minute if you are adding filling that needs baking (think quiche, pumpkin pie.) If you do not need to cook your filling, then cook your pie crust for an additional 15 minutes, or until golden brown and done. 

Step by Step Instructions

Step 1: Pre-heat oven to 375 degrees F. Par-Bake (blind bake) your pie crust as directed below. While your crust is being prepared, start your sausage filling. In a large skillet, crumble sausage with chopped onions on medium-high heat until browned and the onions are translucent. Add garlic and cook for an additional 2 minutes. Remove sausage mixture from pan and put in a large mixing bowl.

Step 2: Add the fresh spinach to the same skillet and cook until wilted on medium heat. Remove pan from heat. Add spinach to cooked sausage mixture. Add 6 oz feta (about 1 cup), 1/2 cup shredded cheddar cheese, and spices to sausage spinach mixture.

Step 3: Stir to combine and pour into par-baked pie crust. Combine eggs, milk/heavy cream, and salt and black pepper. Pour egg mixture over top of sausage mixture. Use a fork to make egg mixture go all around sausage filling.

Step 4: Cook at 375 degree oven for 15 minutes. Add remaining cheddar to top of quiche and cook for an additional 25-30 minutes. Let rest for 10 minutes. Serve and enjoy!

  • 6 oz feta cheese
  • 1 cup sharp cheddar cheese divided
  • salt and pepper to taste
